Black Bean & Portabella
Mushroom Sandwiches
w/Mayo & BBQ sauce
(KATHY TRUE)
In large skillet, put 2 T. Vegetable…Canola or Olive Oil, heat to medium
Add:
1 small pkg. of “baby bellas” or two large Portabella Mushrooms, chopped fine
½ of a chopped onion (medium sized)
½ of a chopped green pepper
Cook these till the onion is getting soft

Add one can of BLACK BEANS DRAINED very well!
“Smush” the beans up with the back of a spoon, cook another few minutes.
Put the mixture into a medium-sized bowl

Clean your skillet, and add:
2 T. oil, let heat while you mix: Bean/Bella Mixture with:
2 eggs or egg-substitute
1 C quick oats
¼ tsp. Paprika
¼ tsp. garlic pdr. or 1 tsp. chopped garlic OR 1 clove fresh
1/8 tsp. black pepper (optional)
1 Tablespoon Honey Mustard
1 Tablespoon Worcestershire or Soy Sauce
6-8 Tablespoons Dried Bread Crumbs (till it gets thick, not runny)
(You can also add more quick oats, or toast bread, and cut into squares)

Scoop out by tablespoons-full into the heated oil, cook on Med-high until they
Are crispy=crunchy on each side, then drain on paper towels.
You will have to add a little more oil and let it heat between patties.
You can make great big patties, but if you make them smaller, they hold together better.
Be sure not to turn over too soon in the oil—
let them get well done on first side and they hold up a lot better when you move them.
Serve on buns or bread with Mayo, BBQ sauce, steak sauce…whatever you like.
And you can add lettuce, tomato …..whatever you like on a sandwich.

They are good hot or cold.
