Vidalia Onion Casserole

½-cup melted butter or margarine, divided

1 cup crushed saltine crackers

4-cups sliced Vidalia onions

4-eggs, beaten

1-1/2- cups milk

¾-cup grated sharp Cheddar cheese

Preheat oven to 350 degrees

Combine ¼ cup melted butter or marg. with crushed crackers. Press into a 9-inch pie pan or 9-inch baking dish.

Saute onion in remaining butter. Spoon onions over cracker layer. Combine eggs and milk; pour over onions, sprinkle with shredded cheese. Bake for 30 minutes. Yields

4-6 servings.

Stuffed Vidalia Onions

Preheat oven to 375 degrees

10 ounces ground beef or ½ can Veggie Burger J
6 medium Vidalia onions
1/4 cup diced green peppers, optional
Chopped onion from what you scoop out of Vidalias
1 egg, beaten
1 cup cooked rice
1/3 cup ketchup
3 tablespoons yellow mustard

Slice bottoms off the onions, leaving some of the root. Just make it even so it will stand up. Peel skins off onion and slice off the top about 1/2 inch down. Take a melon ball scoop or teaspoon and scoop out the insides being sure not to cut through bottom or sides of onion.

Mix the hamburger and other ingredients well.

Stuff meat into scooped out onions.

Place on casserole dish. Bake 50-60 minutes covered with foil.

SPINACH CASSEROLE

2 BOXES OF FROZEN CHOPPED SPINACH
2 HARD BOILED EGGS, CHOPPED
1/2 LARGE ONION, CHOPPED
1 CAN OF CREAM OF MUSHROOM SOUP
1/2 STICK BUTTER GRATED CHEESE
1/2 CUP HALF AND HALF CREAM
PAPRIKA
SALT AND PEPPER

THAW SPINACH AND DRAIN WELL.SAUTE ONION IN BUTTER. COMBINE ONION, SPINACH
AND CREAM IN A CASSEROLE DISH; MIX WELL. SPINKLE CHOPPED ONIONS OVER THE
SPINACH MIXTURE. COVER WITH MUSHRROM SOUP. SPRINKLE WITH SALT AND PEPPER
TO TASTE.TOP WITH GRATED CHEESE AND EGGS.SPRINKLE WITH PAPRIKA.BAKE AT
375 DEGREES FOR 30 MINUTES.BEFORE SERVING,STIR TO MIX ALL INGREDIENTS.

Sweet Potato Casserole

Dennys Sweet Potato Casserole

1 Cup Sugar
3 Cups Cooked Mashed Sweet Potatoes
1 Stick Margarine , Melted
1 Tea. Vanilla
2 Eggs Beaten
1 Tea. Allspice or Cinnamon

Mix Well All Ingredients. Then pour the mixture into a buttered 3 quart casserole dish


Topping

1 Cup light brown sugar
1/2 Cup flour
1/2 Cup Margarine Melte1 Cup Chopped Pecans
1Cup Chopped Pecans

mix well all ingredient then sprinkle over the sweet potato mixture
then bake at 350 for 25 to30 minutes.

Chicken Chalupa (casserole)

Chicken Chalupa

2 lbs. chicken breast
1 pint sour cream
1 can cream of mushroom soup
1 can cream of chicken soup
1 small onion, finely chopped
1 clove garlic, minced
1 lb. grated cheddar cheese
1 small can, diced, green chilies
1 dozen corn tortillas

Mix soups, sour cream, onion, and garlic together. Cook chicken until tender, bone, and break into bite-sized pieces. Grease 3 qt. casserole. Tear 3 tortillas into bite-sized pieces and cover the bottom of the casserole. Spoon about a third of the soup mixture, a layer of cheese, chilies and chicken. Repeat layers of tortillas, soup mixture , cheese, chilies and chicken two more times, ending with the soup mixture. Let stand at least 8 hours in the refrigerator. Bake about 1 hour or until bubbly at 350 degrees. Ten minutes before done, sprinkle a some cheddar cheese on top and return to oven. If it gets dry, add a little milk or more sour cream. Serves 6-8
To compliment this dish, add a green salad and a good crusty roll. Happy cooking!!! (Cook's note: Leftover turkey can be used in the dish).
